About This Coffee

This coffee comes from the Mam indigenous community of Pavencul in Mexico, where Doña Yolanda Velázquez Ortíz and Don Gabino, with over 55 years of experience, have passed on their coffee-growing knowledge to their family and the wider community. Grown at 1,900 meters above sea level on volcanic slopes under shade, it combines altitude, microclimate, and sustainable practices. Made from Bourbon and Caturra varieties, it uses a gentle washed process and natural sun- and wind-drying. The coffee offers a sweet, rounded cup profile with notes of hazelnut and caramel.

Francois Justet and Carmen Callizo had lived in France, England, and Poland before Antoine Netien of Coutume in Paris told them Barcelona would be the perfect city for a specialty coffee business. They opened SlowMov in the Gracia neighborhood in May 2015, making it one of Barcelona's first specialty roasteries alongside Nomad. The space occupies a traditional house that once belonged to a cabinetmaker and hat maker, with nearly four meter high ceilings, Catalan vaulted construction, hydraulic mosaic floors, and wooden beams. A counter separates the seating area from the production space, so customers watch the roasting happen in real time. SlowMov visits producers in Brazil, Ethiopia, and Mexico, maintaining long term sourcing relationships and working only with coffees grown without chemicals, even when not formally certified organic. Local deliveries go out by cargo bike, and all packaging has been fully biodegradable since 2018.
