The Brazilian component is sourced from Daterra farm in Patrocíno, Minas Gerais, at 910-1220 meters elevation, featuring natural processed coffee from various varieties. The Colombian component, called Valientes, comes from Icononzo in Tolima region at 1600-1800 meters elevation, produced by 17 farmers in southern Tolima using Colombia and Castillo varieties with washed processing. Redemption Roasters

Redemption Roasters was founded in 2017 by Max Dubiel and Ted Rosner with a singular mission: reducing reoffending through coffee. The roastery operates a Loring S70 Peregrin inside HMP The Mount in Hemel Hempstead, in partnership with the Ministry of Justice, and opened a second facility in Wembley in 2023. Barista academies now run in nine or more prisons across the UK, and over 1,500 individuals have completed training programmes. The results are striking: a 4% reoffending rate among their graduates compared to the national average of 42%. Redemption operates twelve London coffee shops and generates £3.47 in social value for every pound invested. Sourcing reflects the same ethos, including beans from Colombian ex paramilitary farmers rebuilding their lives and from female producers in Brazil.
