Las Nubes is a washed Arabica coffee from the Planadas terroir in the Tolima region of Colombia, grown at altitudes of 1700–2000 meters. The coffee features varieties Castillo, Colombia, and Caturra Rouge, cultivated by indigenous producers using environmentally friendly practices intercropped with maize and beans. Cherries are hand-picked selectively and processed through traditional fermentation with double washing, then patio-dried to 10.5–11.5% moisture. Light roast with flavor notes of lemon, caramel, milk chocolate, almonds, and cashew nuts. Recommended for filter brewing.

Founded in 2020 by Francesco Impallomeni, Jacob Frankel, and Miguel Botero in Copenhagen's Amager district, Nordic Roasting Co. operates as a roastery, cafe, and educational hub. Most of their coffee is direct traded with farmers, with remaining purchases made transparently through importers who disclose prices paid to producers.
