Single origin decaf coffee from Peru, produced by COOPAFSI (Cooperative Agraria "Frontera San Ignacio" Ltda) in the Cajamarca region. Grown at 1500 to 1750 meters above sea level. The coffee features Catimor, Caturra, Mundo Novo, and Typica varieties. Decaffeinated using the Mountain Water Process. Certified organic. Flavor notes include brown sugar, milk chocolate, and raisins.

Overwinter Coffee was founded in 2017 by Ben Trojan and Joshua Halliman in Buffalo, New York, with Trojan bringing experience from his time at Peregrine Espresso in Washington, DC. The roastery began as an online retailer and wholesale supplier before establishing itself as a leading coffee provider throughout Buffalo and Western New York. Every coffee is roasted exclusively on a Diedrich IR 12, a choice that supports the roastery's philosophy of light roasted, long developed single origin beans that honor origin character.
