This coffee is grown in Pitalito and surrounding regions (Acevedo, Palestina, Timaná, Suaza) within Colombia's central cordillera at 1,500–1,750 meters altitude. Produced by 50+ smallholder farmers and hand-sorted at each individual farm. The coffee features varieties Castillo, Caturra, and Colombia. It is washed-processed and decaffeinated using Natural EA (ethyl acetate derived 100% from sugarcane) at Descafecol plant, removing 99.7% of caffeine. Flavor notes include berries, dried fruit, and chocolate with preserved original flavors and added fruity complexity.
