About This Coffee

This certified organic coffee is grown on small farms averaging less than 1 hectare by over 20,000 small-scale farmers in East Timor's rugged highlands. The coffee comes through the Cooperativa Café Timor (CCT), formed in 1994. The varietal is Híbrido de Timor, which was introduced after leaf rust wiped out earlier crops. The coffee is 100% organic and fairly traded, featuring a deep, earthy body with herbal notes and a smooth chocolate finish.

Lighthouse Roasters

Lighthouse Roasters has been roasting coffee in Seattle's Fremont neighborhood since 1993, operating from the same 120 year old Craftsman building where it started. The centerpiece of the operation is a vintage 1952 Gothot cast iron drum roaster, a machine the team has adapted over three decades to produce a depth of character they believe modern automated equipment cannot replicate. The 15 person team brings over 250 years of combined roasting and barista experience, with many staff members having worked at Lighthouse for 10, 15, or more than 25 years. Sourcing priorities lean toward clean, sweet, well structured coffees from producers and cooperatives who share the same commitment to craft. The roastery has remained independent and intentionally small, preferring to let the vintage roaster and the consistency of its people define the quality.
