The Arara is a Brazilian specialty coffee varietal cultivated at Fazenda Um in Minas Gerais. This 100% arabica coffee originates from a cross between Obatã and Catuaí Amarelo varieties, resulting in high productivity and resistance. The coffee is processed using the pulped natural method and features a medium roast. The flavor profile includes vibrant nectarine notes, deep date sweetness, and a distinctive milk chocolate finish. It offers medium, juicy acidity with a full and velvety body.

Um Coffee Co

Um Coffee Co was founded in 2015 in São Paulo by siblings Boram and Garam Um, whose family's connection to Brazilian coffee stretches back decades through their father Stefano, a South Korean immigrant who arrived in Brazil in 1976. Boram Um became the 2023 World Barista Champion after winning three Brazilian Barista Championship titles, while Garam took the 2023 Brazilian Brewers Cup title and placed third at the World Brewers Cup that same year. The company is vertically integrated, growing coffee on its own farms in Minas Gerais and Espírito Santo, where more than 40 arabica varietals are cultivated using natural and anaerobic fermentation methods. Roasting capacity reaches several tons per month, with around 80 percent of production meeting specialty grade standards. Um Coffee Co also runs a training academy founded in 2017 that offers a full range of SCA certified courses, making education a core pillar alongside farming, roasting, and brewing.
