A specialty coffee from Dr. Manuel Díaz's experimental farm, Teocelo Agroforestal, SPR, located in Baxtla, Teocelo, in the state of Veracruz, Mexico, at 1,400 meters above sea level. This lot features a blend of three top varieties from the farm: Indiana, Typica, and Bourbon. The coffee undergoes anaerobic fermentation in cherry inside food-grade plastic bags for five days, followed by very slow drying on raised beds with four rest intervals to fix aromas in the seed. The result is a coffee of extraordinary sensory complexity.
