About This Coffee

This is Sống Động - a rare and experimental lot from Lộc Rừng Coffee in Vietnam, sourced from a new partnership. It is a blend of Coffea liberica and Coffea dewevrei (Excelsa), two seldom-used species representing under 1% of global coffee production. The cherries are grown on relatively high ground for these species and processed using an extended 20-day carbonic maceration method, with cherries fermented in a CO₂-rich, oxygen-starved environment before slow drying on shaded beds for approximately 30 days. The result is a cup profile with intense acidity and fruit flavors, featuring notes of red wine, grape, mango, jackfruit, rich dark chocolate, and sesame with stevia-like sweetness. The mouthfeel is surprisingly dense and complex, offering a sweetness totally different from the usual Arabica profile.

Matt's background spans aircraft engineering in Australia and years of competition at the highest level of specialty coffee. Every batch is roasted to order, with a deliberate focus on brightness, sweetness, and flavor. Rose sources top end specialty lots through direct relationships with farmers in Panama, Colombia, Ecuador, Ethiopia, China, and Indonesia. The name represents a duality Matt finds in great coffee: something simple and familiar on the surface, yet layered and complex underneath. It is a small, independent roastery with no shortcuts and no cheap blends.
