This Liberica coffee from Vietnam's Quảng Trị region is processed using the Anaerobic Natural method by 96b Cafe and Roastery in collaboration with Htx nông nghiệp sinh thái bốn phương. Cherries are fermented in sealed bags for 120 hours, then dried for 3 days, re-bagged in a dark room for 2 weeks, and dried to 12% moisture. The beans are notably smaller than typical Libericas. Tasting notes include aromas of berries, jackfruit, and toasted nuts, with a sweet cup featuring stevia-like sweetness, bright citrusy acidity, tropical fruit flavors like cherimoya and jackfruit, and a long finish with coating mouthfeel.
