This Colombian coffee is from Villa Pastora farm in Palestina, Huila, at 1680 meters altitude. Produced by Familia Mora, this Pink Bourbon variety undergoes natural processing with aerobic and anaerobic fermentation. After harvest, the coffee is oxidized for 48 hours, then fermented in sealed tanks for 48 hours, followed by 8 hours in a mechanical dryer and 14 days in a drying shed. The flavor profile features sweet juicy papaya, intense pineapple, rum cocktail notes from heavy fermentation, tropical fruits, black cherry, and coconut. When combined with milk, it presents passion fruit yogurt characteristics with a silky smooth mouthfeel.
