Decaffeinated Colombian coffee from the Cauca region, grown by a cooperative at altitudes between 1500-2000 meters. The coffee features Caturra and Castillo varieties processed using the Sugar Cane decaffeination method, which uses mountain spring water and ethyl acetate extracted from sugar cane molasses. This natural solvent selectively removes a minimum of 97% caffeine while preserving flavor. The coffee is then re-dried in mechanical silos to stabilize it and enhance cup expression. Flavor profile includes honey, cookie, plum, and dark chocolate notes.
Harmony Roasters began in 2021 when Dani sold his motorbike to buy a one kilogram capacity roaster. Together with his partner Agatha, who handles photography, social media, and the web presence, Dani built a micro roastery in Montcada i Reixac on the outskirts of Barcelona. His approach favours minimal intervention, letting the coffee's natural character come through rather than imposing a heavy roast signature. It paid off quickly: Dani won both the Catalan Coffee Roasting Championship and the Spain Roasters Championship in 2021, then took the Catalan title again in 2022. The roastery uses fully compostable packaging and supplies several businesses around Barcelona.
