About This Coffee

This is a limited edition espresso blend from Wicho Valdés, composed of 69% Caturra and 31% SL28 varieties. Both coffees are washed and grown on the San Lorenzo farm in Cobán, Guatemala at 1400 meters altitude. The producer is Wicho Valdés, who returned to coffee farming in 1998 and now manages his farms using regenerative methods. Since 2021, he has developed natural solutions in his farm lab that have eliminated pesticide use and halved fungicide requirements. The coffee cherries are pulped after harvest, fermented for up to 14 hours, washed, and soaked in clean water for 24 hours. Beans are initially sun-dried outdoors, then moved to greenhouses where they rest on raised beds for 15 to 30 days. The coffee presents flavors of milk chocolate, sweet grapes, and a hint of apple compote, delivering a sweet, smooth, and balanced espresso profile.

Johan & Nyström

One of the earliest names in Swedish specialty coffee, Johan & Nystrom was co founded by Johan Wallenborg and Ola Nystrom in Stockholm in 2004. The roastery helped establish the culture of single origin coffee and direct trade sourcing in a market that was just beginning to look beyond commercial blends. Over two decades, the operation has grown into one of Sweden's most recognized specialty brands, supplying cafes, restaurants, offices, and retail customers across the country. The roasting philosophy centers on drawing out each coffee's individual character. Johan & Nystrom also runs educational programs including barista training and coffee courses, and its beans are distributed through specialty retailers such as Bonor & Blad. A subscription program keeps regular customers stocked with seasonal releases.
