This two-farm blend combines coffee from Finca Las Trincheras in Tlaltetela, Veracruz, Mexico and Santa Barbara Estate in Antioquia, Colombia. Finca Las Trincheras is a hundred-hectare farm managed by Jose Cienfuegos Garcia, whose coffee has earned a Cup of Excellence award for clarity and sweetness. Santa Barbara Estate was built by Don Pedro Echavarria as one of Colombia's few fully integrated farms ensuring traceability from cherry to export. The coffee features Typica, Colombia, and Castillo varieties processed using the washed method at 1400 meters altitude. Medium roasted by Craig Deahl with flavor notes of baking spices, crème brûlée, and red currant. Recommended rest period is 1-2 weeks.
