About This Coffee

This coffee is a Pink Bourbon variety from Huila, Colombia, produced by Yenifer Rojas Trujillo on her four-hectare farm Varietales. Grown at 1750-1800 meters altitude, the coffee is washed processed with a 12-hour initial fermentation in tanks, followed by depulping and another 48 hours of fermentation, then dried for an average of 15 days in a traditional marquesina. The Pink Bourbon variety has higher glucose content and produces a sweeter cup with fruit-forward characteristics and intense floral notes. Recent genetic testing reveals it is most genetically similar to Ethiopian Landraces. The producer intercrops with yucca and plantain, employing environmentally friendly growing practices. The coffee features tasting notes of blood orange, pineberry, vanilla orchid, and maple with sparkling body and crisp acidity.
