Skallebæk and Kristoffersen are master bakers who previously built the Lagkagehuset bakery chain, bringing a craftsman's precision to the coffee operation. The roastery runs a Loring S70 Peregrine, a convection design that reduces carbon emissions by up to 80% compared to traditional drum roasters while delivering consistent, precisely developed profiles. Green beans are sourced primarily from Africa and Central America through direct relationships with farmers, and every batch undergoes post roast colour analysis, cupping assessment, and espresso testing before release. The company has expanded to locations across Denmark, Germany, France, and Portugal, pairing its specialty coffee with sourdough bread and pastries rooted in Danish baking tradition.
