The couple brought roasting in house in 2020, sourcing green coffees through importers while building direct relationships with producers where possible. Hedge emphasizes environmental stewardship and transparency in its sourcing, treating sustainability as an operational priority rather than a marketing angle. The roastery's roots in catering gave it an unusual perspective on service and portability that still shapes how it approaches coffee.
