Holly Keyser, a UK born coffee professional who spent six and a half years in Melbourne's specialty scene before moving to Iceland to work as a glacier guide, founded Skool Beans in 2020 in the small coastal town of Vík near the famous Black Sand Beach. The roastery and cafe are housed inside a converted American school bus sourced from a former U.S. air base, making it Iceland's first micro roaster and one of its most distinctive, heated by a log burning stove and home to a resident three legged cat named Jeffrey. Keyser renovated the bus slowly over a couple of years on her days off, deliberately avoiding debt, and the result has earned recognition as Iceland's Best Specialty Cafe 2024 as voted by European Coffee Trip. Beyond specialty coffee roasted in house, the menu features signature hot chocolates including Dragon's Breath made with white chocolate, dragon fruit, and cayenne pepper, and the bus doubles as a showcase for local crafts, soaps, and jewelry made by Keyser and nearby artists. The operation drew a visit from the President of Iceland and the First Lady in 2023, a testament to how a school bus on Iceland's southern coast became one of the country's most celebrated coffee destinations.
