About This Coffee

This single origin coffee features the Java varietal from El Vergel Estate in the Tolima region, Fresno, Colombia, grown at 1500 meters altitude. Produced by Elias and Shady Bayter, the coffee undergoes honey processing combined with carbonic maceration. The process includes a 4-hour aerobic pre-fermentation, 25 hours of carbonic maceration in a bioreactor with CO2, followed by 120 hours of natural honey fermentation with the mucilage intact. The coffee is then mechanically dried for 96 hours and rested for 30 days in GainPro bags. Flavor notes include raspberry liqueur and licorice vine, with floral, wine-like characteristics and vibrant citric notes.
