It is a blend sourced from 12 select farmers and processed by Volcafe Santos in Varginha, Minas Gerais. The varietals include Mundo Novo, Catuai Red and Yellow, Topazio, Catucai, and Acaia. The natural processing involves collecting ripe and raisin cherries, sun-drying for 2-7 days, mechanical drying, and 30 days resting in wood boxes. Flavor notes include dark chocolate, brown sugar, and granola.
