About This Coffee

This honey-processed coffee is from Cerro Las Ranas (the Hill of Frogs) in Apaneca, Ahuachapán, El Salvador, grown at 1450-1780 meters above sea level. Produced by Jose Antonio Salaverria at JASAL, a family-owned operation. The coffee features six varieties: Bourbon, Pacamara, Sarchimor, Pacas, Catuai, and Caturra. Using the pulped natural honey process, perfectly ripened cherries are pulped and the beans are dried with mucilage on clay patios while constantly turned for even drying. Flavor notes include raspberry, chocolate, and apricot with a balanced profile, slight fruitiness, and light acidity.
