A single-origin washed coffee from Alejandro Rodriguez's farm Los Cedros in the El Volcancito region of Santa Rosa, Guatemala, grown at 1,670 MASL. The variety is Pache San Ramon. Cherries undergo 24-hour anaerobic fermentation in cherry, are then de-pulped without water, followed by 36 hours of dry fermentation in plastic bags, and dried on raised African beds for an average of 13 days. Harvested January to May 2025. Roasted light (Agtron 93) with tasting notes of lilac, apricot, and gooseberry.
