This coffee is a single origin from Valle de Angeles, Francisco Morazan, Honduras, grown at 1650 meters elevation at Finca Liquidambar. Produced by Alexia Mejia, the coffee features the Parainema variety and is processed using an anaerobic washed method. Cherries are harvested and placed in sacks for 24 hours, then anaerobically fermented in barrels for 16-24 hours, washed, pulped, and dried to 11-12% moisture. The light roast coffee offers tasting notes of sweet apple, kiwi, plum, and herbal tea.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
