Variety 74158, processed using Moon Shadow Natural #3 method: ripe cherries dried in shade to 20% moisture, then matured in complete darkness with controlled ventilation for 57 days until reaching 11% moisture. Light roast with tasting notes of bergamot, raspberry, dragonfruit, and rose. Clean and delicate natural processing with remarkable clarity and complexity.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
