This Yellow Bourbon coffee from Minas Gerais, Brazil is produced by small-scale growers using traditional methods. The coffee undergoes natural processing with wild fermentation, where the whole cherry is dried intact allowing natural fermentation to develop the flavor profile. This light roast coffee features high body and medium acidity with high sweetness. The flavor profile includes mango, cherry, and vanilla notes, resulting from the combination of the Yellow Bourbon variety and the wild fermentation natural process.
Uncommon Coffee started as a cafe in Saugatuck, Michigan in 1994, founded by Guy Darienzo and Stephen Keye. In 2021, after 27 years under the original owners, the business was acquired by Bruno Nobre and Mauricio DaSilva, both from multi generational coffee farming families in the Minas Gerais region of Brazil. They had previously supplied beans to Uncommon as partner farmers, making the transition from grower to roaster a natural one. The roastery now serves over 200 businesses across the Midwest. Uncommon is farmer owned and minority owned, and operates with a goal of being landfill free, using BPI certified compostable cups and sleeves throughout.
