This blend combines three coffees from Brazil and Colombia. The Brazilian component is from Cerrado Mineiro, a naturally processed regional blend sourced through Bossa Coffee and Expocacer, representing over 700 producers. It includes multiple local varietals delivering chocolate, dark berry sweetness, citrus fruitiness, and a whole-nut finish. The Colombian components come from La Plata in Huila: La Estrella del Ostro features Castillo, Caturra, and Colombia varieties, sun-dried on parabolic covered patios and raised beds, bringing caramel, cocoa, red apple, orange, kiwi, and cranberry notes. The third component is El Diviso, a Caturra lot from Pitalito at 1,800m, produced by Nestor and Adrian Lasso using double anaerobic fermentation: 20 hours initial anaerobic fermentation, 16 hours in smaller batches, 18 hours submerged in water and leachate after depulping, then mechanically dried. The cup profile features milk chocolate, nougat, maple syrup, strawberry jam, tangerine, and passion fruit, with a syrupy texture and sweet finish.
