This coffee is from La Nueva Montaña, a small farm in El Palmar, Fraijanes, Guatemala, owned by Antonio Gonzales and his wife Eby Aracely Samayoa. The coffee grows at 1600-1800 meters altitude under shade trees of Inga, Gravilea, and Avocado. It is a natural processed coffee made from red and yellow Catuai varieties. Only the ripest cherries are handpicked through three picking passes, then fermented in sealed bags for up to 14 hours, soaked in water to remove floaters and lower microbial count, and dried on raised beds for about 20 days with four turns per day.
