Cherries are hand-picked, rinsed, sorted, then fermented anaerobically for 84 hours in 60kg tanks with periodic shaking. After mechanical drying and sun-drying to 11% moisture, beans are stabilized and stored in GrainPro bags for 45 days before milling. Bright and fruity with flavor notes of lemon zest, strawberry, violet, papaya, and rainbow sherbet.
