About This Coffee

This coffee is sourced from Yirgacheffe Aricha, Ethiopia, grown at approximately 2100 masl under false banana shade trees following organic agriculture practices. The farm spans 2.5 hectares and works with a 200-bed washing station. The variety is Heirloom J.A.R.K 74/158, selected for pest resistance and higher yields. After harvesting and sorting, cherries are fermented in plastic barrels for nine days, then laid on raised beds to dry for 13–18 days. Flavor notes include fermented stone fruit and raspberry.

D612 supplies notable Florentine establishments including Simbiosi, Melaleuca, and Brac, building a quiet but growing presence in a city where traditional espresso culture still dominates.
