About This Coffee

This coffee is a single origin from Colombia, specifically from the Pitalito region in Huila. It is produced by Aroma Nativo as part of the Veci Project, which collaborates with local coffee farmers. The beans are Pink Bourbon variety, grown at an elevation of 1700-1750 meters. The coffee undergoes a Honey Double Fermentation process: the ripest Pink Bourbon drupes ferment in a controlled anaerobic environment, followed by pulping and additional fermentation in barrels with native bacteria and special yeast. The beans are then sun-dried on raised beds for 13 days and rested for 2 months for stabilization.
