About This Coffee

This Colombian single-origin coffee comes from smallholder farmers in Huila, specifically the municipality of Palestina, at 1690-1850 meters elevation. The Castillo variety is processed using the washed method, which includes selective picking, 24-hour maceration, depulping, 24-48 hours fermentation, and 7-21 days drying on raised beds. The coffee features bright malic tartness balanced with rich nuttiness, offering versatile flavor notes of apple, pear tart, and hazelnut. Medium roast.

Moonwake Coffee Roasters

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
