Co founded by Nadege Forestier, originally from France, and Ryan Romard, Hatch Coffee has been roasting in Toronto since 2015 with a vibrant, fruit forward style that prioritizes acidity and clarity. The roastery works exclusively with single origin coffees and offers no blends at all, a deliberate choice that keeps the focus entirely on what each origin has to say. They roast on a Loring in small batches, sourcing from Ethiopia, Kenya, Colombia, Guatemala, Costa Rica, and Rwanda through importers including Cafe Imports, Collaborative Coffee Source, and Ally Coffee. The philosophy is minimal intervention: let the coffee speak for itself. Located on College Street in Little Italy with a second spot in Parkdale, Hatch is known for exceptional staff training and detailed coffee knowledge shared freely with customers. Their wholesale program is intentionally limited to partners who share the same quality commitment.
