Bourbon Rojo [Colombia]

Bourbon Rojo [Colombia]

Gregorys Coffee

About This Coffee

This coffee features Bourbon Rojo cherries from Colombia's Esmeralda Negra farm. The cherries are hand-selected and processed using anaerobic fermentation, sealed in an oxygen-free, temperature-controlled, pH-regulated environment for 120 hours. This experimental processing method transforms the coffee from the inside out. The coffee offers fragrances of jasmine and wildflowers, with tasting notes of lychee, apricot, and white grapes that evolve as the coffee cools. Roasted in ultra-small batches as part of the LIVE Coffee Line, which showcases coffees that push the boundaries of flavor through meticulous craft roasting. Best brewed as pour-over at 1:14 ratio.

Gregorys Coffee

Gregorys Coffee was founded in 2006 by Gregory Zamfotis in New York City, growing from a single Manhattan location into a specialty coffee operation spanning more than 50 locations across multiple states. Zamfotis opened a dedicated roastery and commissary in Long Island City, Queens, in 2016, bringing production in house to maintain quality control at scale. The company comes from a family background in New York food and hospitality, and that heritage shows in its approach to service and consistency. Gregorys is a roaster that has managed to scale without abandoning the quality focus that defined it from the start.
