Single origin coffee from Fazenda Guariroba in the Campo Das Vertentes region of Minas Gerais, Brazil. The farm is run by Homero Aguilar Paiva, whose family has been growing coffee for 5 generations across 547 hectares, with 203 hectares devoted to coffee. This Yellow Catuai variety is grown at elevations between 920-1100 meters. The coffee is processed using the pulped natural method, where cherries are partially depulped within 24 hours of harvest, then spread across patios and dried in mucilage for two weeks until reaching 11% moisture content. Flavor notes include blueberries, chamomile tea, and hazelnut.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
