This coffee is from Fazenda Irmas Pereira, an 850-hectare farm in Carmo de Minas, Brazil, where 330 hectares are planted with coffee including Yellow Bourbon, which comprises this lot. The coffee is processed using the Natural Process method, where the beans are dried enclosed in their entire fruit. The farm is managed by sisters Maria Valeria and Maria Rogeria, daughters of Antonio Andrade Pereira Filho and Maria da Conceição Costa Pereira who started the farm in the 1970s. Yellow Bourbon is a variety that turns yellow when ripe, unlike most other varieties that are cherry-red. It is believed to be a cross between Red Bourbon and Yellow Typica, originating from Île Bourbon. The variety produces sweet chocolate, ripe fruit, and mild citrus characteristics.
