This coffee is from Nicaragua, specifically the Dipilto and Mozonte regions of Nueva Segovia, grown at altitudes between 1300-1600 meters. Produced by Claudia Lovo at Bridazul farm, this is a blend of different coffee varieties called Little Red Riding Hood. The coffee undergoes pre-fermentation and natural (berry-dried) processing. Tim and Claudia have experimented for years with fermentation and drying times, collecting data on time, temperature, and yeast composition. The flavor profile features tropical fruit, vinous notes, and cherry characteristics.
