This coffee is produced by Claudia Lovo at Bridazul in the Nueva Segovia region of Nicaragua, specifically from the Dipilto and Mozonte areas at 1500 meters altitude. It is a blend of Caturra and Catuaí varieties processed using the Carbonic Maceration method, where coffee cherries are fermented in an anaerobic environment with added carbon dioxide before being dried on raised beds. This lot, named Little Red Riding Hood, offers a complex and intense flavor profile featuring notes of apple cider, mango, and caramel.
