This coffee is a Caturra and Catuaí variety from the Nueva Segovia, Dipilto & Mozonte region of Nicaragua, grown at 1500 meters altitude. Produced by Claudia Lovo at Bridazul, it undergoes a carbonic maceration process where coffee cherries are fermented in an anaerobic water bath with added carbon dioxide, followed by drying on raised beds. This lot, named Little Red Riding Hood, offers a complex and intense flavor profile featuring notes of dark chocolate, tropical fruit, and dark rum. This version is roasted specifically for espresso brewing.
