A washed Sarchimor from Mexico produced by Carlos Cadena (Finca Pocitos and Finca Huehuetepan). Ripe cherries are depulped, fully washed, and dried for 36 hours on raised African beds. The cup is mellow and comforting with a trail-mix-meets-biscuit character, soft dried-apple sweetness, and a cookie-like finish. This lot emphasises clean, consistent sweetness and approachable, steady flavour.
