Carmen Montoya is a Chiroso single-origin coffee from the Belle Vista farm in Colombia. The lot is processed with a hybrid washed method: a short aerobic fermentation in cherry followed by a slow three-day anaerobic stage after pulping. The cup is bright and elegant with floral and citrus character—notes of lemongrass, jasmine, and apple candy—presented in a light roast with lively acidity and a delicate body.
