About This Coffee

This Natural Yirgacheffe Chelbesa coffee comes from the Worka Chelbesa area of Ethiopia's Gedeb district, a high-altitude, semi-forested region known for exceptional coffee. Grown between 1,950 and 2,200 meters and harvested from November to January, the coffee is produced by a group of smallholder farmers. Ripe cherries are processed at SNAP Specialty Coffee's Danche wet mill using the natural method, then slowly dried on raised beds for approximately 12 days. The result is a clean, expressive cup with tasting notes of blueberry, citrus, and a creamy buttercream finish. The varietals are 74110 and 741112, which are Ethiopian heirloom varieties.

Ben Stokes founded Colours Coffee from Hullavington in Wiltshire after apprenticing under UK Barista Champion Maxwell Colonna at Colonna and Smalls in Bath. Over several years there he honed his skills in espresso preparation and brew methods before his focus gradually shifted toward roasting. A trip to Colombian coffee farms deepened his understanding of the full bean to cup journey. The roastery uses a colour coding system to categorize its single origin offerings, making the range more navigable for customers who might find specialty coffee terminology intimidating. Current offerings include anaerobic processed beans from Colombia's Finca Chorro Alto, washed El Salvador, and natural Burundi. The venture shares space and community with the nearby Flying Monk Brewery.
