This Ethiopian coffee is from the Chelchele washing station located in the village of Chelchele in the Gedeb region, at an altitude of 1945 to 1970 meters above sea level. It is a natural process coffee where ripe cherry deliveries from smallholder producers are hand-sorted, with the best cherries placed on raised beds to dry in the sun for up to 21 days. The coffee features mixed Ethiopian varieties including Kurmue, Dago, and Wolisho. The flavor profile includes blueberry and sponge cake notes. The washing station includes 12 standardized washing tanks and 360 drying beds.
Kenny and Justin founded Coborn Coffee after a conversation in an East London pub on Coborn Road, incorporating the company in 2022. The roastery operates from Tyssen Street in Hackney as a micro roasting operation with a pointed sourcing principle: every coffee comes from a named female producer or a majority women owned farm. The decision reflects the reality that women make up the bulk of the coffee production labor force globally yet own a disproportionately small share of farms. Justin, self titled Head of Mischief, brings an intentionally joyful energy to the project. The goal is to pay farmers fairly while keeping specialty coffee accessible to the local community rather than pricing it as a luxury product.
