About This Coffee

This coffee is from the Chilaka Washing Station in Bensa, Sidama, Ethiopia, grown at altitudes between 2,320-2,400 meters above sea level. The variety is 74158, processed using anaerobic natural method with 240 hours of fermentation. Ripe cherries are sealed in blue plastic tanks for 240 hours of anaerobic fermentation in a cool environment, then spread on African raised beds for 25 days of drying with hourly turning. Dried cherries reach 11-11.5% moisture and are rested for a minimum of 45 days before milling. The coffee features tasting notes of pineapple, mango, and honey with a syrupy body and long lingering sweetness.

Glyph Supply Co is a collaborative co roasting and cafe concept that opened at 111 Somerset on Orchard Road, bringing rare indie specialty coffee to a stretch of the city otherwise dominated by chain outlets. The roastery sources beans directly from origin with the aim of benefiting both farmers and consumers, and serves as the official Singapore distributor for Stronghold Roasters, the high tech Korean roasting machines. Glyph's space is designed as a community hub where other local roasters and brands are regularly hosted for collaborations, cuppings, and knowledge sharing sessions, and its Stronghold S7 Pro sample roaster is available for anyone in the trade to use. A sister bakery, Dough Coffee, supplies the pastry counter, while the main roastery and green bean storage operate from a separate facility at Tai Seng Street.
