About This Coffee

This single-origin coffee from Colombia comes from the Pitalito region in Huila, grown at 1800-1850 meters above sea level. Producer Nestor Lasso cultivates the Chiroso variety at the El Diviso farm, which spans 18 hectares with 15 hectares dedicated to coffee and 2 hectares of forest. The coffee is processed using a washed method involving anaerobic fermentation in closed cans, oxidation in a large tank, pulping followed by 20-hour oxidation with mucilage, submerged fermentation with added leachates, and washing with hot water. The coffee is then dried in parabolic dryers for 18-24 days. This coffee features tasting notes of thyme, camomile, and bergamot, and is suggested for filter brewing.

His Majesty the Coffee

His Majesty the Coffee is based in Villasanta near Monza in Italy's Lombardy region. Founded in 2013 by Paolo Scimone, a certified Q Grader for both Arabica and Robusta, it was one of the first Italian roasteries to deal exclusively with specialty coffee, requiring a minimum 80+ cupping score with no primary defects. Paolo's love for England and the Royal family, developed during his years working as a barista in London from 2005 to 2009, inspired the name and the Anglo Italian duality that runs through the brand, from house blends named Londinium and Modoetia to two custom painted roasters called Elizabeth III and Teodolinda II. Green beans are stored in a dedicated cold room at a constant 12 degrees with 50 to 60 percent humidity, and roasting profiles are created specifically for different brew methods. A two time podium finisher at the Italian Coffee Roasting Championship and recognized as a Top 3 European Specialty Coffee Roastery in 2018, Paolo also travels worldwide as a consultant and trainer for the next generation of roasters. The operation combines Italian creativity and tradition with English innovation in a way that is entirely its own.
