This coffee is a Typica Amarillo variety from La Macarena farm in Piendamó, Cauca, Colombia, grown at 1900 meters above sea level by Wilton Benítez. It undergoes an innovative process involving anaerobic fermentation with selected yeast in bioreactors, followed by a thermal shock wash. The flavor profile is described as juicy, sweet, and full-bodied with notes of lemongrass, peach, and black tea. Tropical fruit notes including passion fruit, lychee, pineapple, and coconut are also highlighted.
