A rare competition-grade microlot from El Diviso farm in Pitalito, Huila, Colombia, produced by Nestor Lasso at 1800 meters altitude. The Ombligon variety is a local Ethiopian landrace cultivar whose cherry features a distinctive navel-like protuberance. Processed via an elaborate multi-stage natural method called "Natural Floral Symphony," involving aerobic oxidation, anaerobic fermentation, tank oxidation, BioMaster-controlled anaerobic fermentation, must immersion, thermal shock (quenching), and Pristine Precision Drying. Flavor notes include watermelon juice, sour cherry syrup, and strawberry candy, with medium-high acidity and a full body. Scored 90+ points. Limited to 50 packages.
