About This Coffee

A Colombian Tabi variety coffee from Farm Las Flores in Pitalito, Huila, grown at 1750m altitude. Produced by Jhoan Vergara, a microlot processed using an innovative multi-step method: aerobic fermentation (96 hours), thermal shock treatment, and pressure anaerobic fermentation with nitrogen injection in a BioMaster tank. Dried using "Pristine Precision Drying" in a sealed dehumidifier. The Tabi variety is a hybrid of Typica, Bourbon, and Timor Hybrid, developed by Cenicafé in 2002. Flavor notes include peppermint, dark chocolate, and balsamic herbs, with medium acidity and a velvety, very sweet body. Scored 90+ points.
