About This Coffee

This coffee is a Caturra variety from El Vergel Estate in the Caldas region of Colombia, grown at an altitude of 1800 meters. It undergoes a meticulous natural anaerobic processing method, involving a 36-hour pre-fermentation followed by 96 hours in hermetic tanks. This light roast coffee offers a vibrant, fruity acidity and caramel-like sweetness, with distinct flavor notes of forest fruits, clementine, caramel, and a hint of seaweed in the aftertaste.

Ief & Ido

Ief & Ido is a specialty roastery in The Hague, the Netherlands, founded in 2018 by the father and son team Ido and Ief. Ido had been home roasting for over 15 years, at one point pulling shots on an original Faema E61, while Ief discovered specialty coffee through an espresso in Berlin that led him to study the craft across several countries. Together they roast on a Giesen W15 in an old industrial building in The Hague's southwest, combining hand regulated control with modern monitoring technology. Sourcing runs directly from farmers beyond Fairtrade standards, with fully traceable single origins from Brazil, Colombia, Guatemala, Ethiopia, Costa Rica, Kenya and Mexico, each listed with processing method, tasting profile and body and acidity ratings. Ief & Ido supplies over 50 locations in the region including Michelin starred restaurants and the concert venue Paard van Troje, and delivers locally by cargo bike.
