This coffee is a Red Bourbon from the Campo Hermoso farm in Circasia, Quindío, Colombia, grown at 1,550–1,600 meters altitude. The farm is a family-owned estate of approximately 2.5 hectares managed by fourth-generation producer Edwin Noreña. The processing is red honey with mossto recirculation for 72 hours — cherries are mechanically depulped with significant mucilage retained, then undergo a controlled anaerobic fermentation submerged in mossto (coffee cherry juice) to intensify fruitiness and complexity. Roasted as a filter coffee with flavor notes of elderflower syrup, peach nectar, and strawberry.
