This single-origin Colombia Carambolo comes from Pitalito in Huila, grown at 1780–1900 m. The lot includes Colombia, Castillo, and Caturra varieties and is processed using a washed method that includes a 24-hour oxidation stage before depulping and a controlled mechanical drying. Roasted for espresso, the cup is fruit-forward with bright acidity and tasting notes of lime, lemongrass, starfruit, and almond.
